What is the best time of year to catch them & is it best to fish for them day or night

It really depends on the venue, night fishing is best during the warmer months with day time being better when the water temp drops, water clarity pays a big part as well as the wind,

Best time for them? again depends on the venue but I would say September until May

what venue are you going to fish for them?

I agree with Darrell.
All depends on the venue, with canals differing from rivers in terms of best times.
Water clarity and temps play a big part, with nights being good for the warmer summer months as temps drop.
Clarity may not matter as much on a deep canal for example, as opposed to something more shallow.
Zeds always like a bit of colour, and an overcast day even with a bit of rain and a howling wind can be very good.
