Hi Mike - nice mullet.

It is a Striped Mullet (Mugil cephalus) - very common on the western side of the North Atlantic.

They are good sport on fly - they take flies somewhat more readily than do the grey mullets on the N. European side of the Atlantic - I've had striped mullet in both Texas and the Canaries (where it is known as the Flathead Mullet)

I returned my Striped Mullet, but have eaten other species - the Yellowtailed Mullet of Australia is a surf-beach mullet and excellent eating. The Southern Harder Mullet of S Africa (a mullet of BIG salt lagoons) is also good. The Thick-lipped Mullet found in many harbours and estuaries in the UK is not usually eaten - it hangs around sewage outfalls - 'nuff said.

That would be a mullet my friend. The best thing to do with is to get a bigger rod, a 12/0 hook and some steel cable and bait him up for either tarpon or a big south Florida Shark!!

Also good if fried immediately after caught!

Boil it for 2 hours, Bake it at 350deg for 1 hour. Boil it again for 2 more hours. Bake for 20min then let cool and feed it to your dog!

mullet dont need long to cook...try shallow frying them in some olive oil and a couple of chopped galic cloves , 3 mins each side , a little sea salt and cracked black pepper then finish with a squeeze of lime ,serve with green salad, ie apple,cucumber,peppers and some frissee lettuce and a dollup of creme fraiche !! enjoy !! if you would like to see some more recipes you can view some more of my menus at www.holbrookhouse.co.uk...
