Perch-riftic day today>

First time on the ice this season.
We were a little late getting there today but fished from 9-1. Headed out to 19 fow from Gilford, Ont., Canada & lucked out at the first place we tried. Pretty steady action which produced a limit for the 2 of us. Mostly 8"-10" perch with a few bigger and some smaller that couldn't be released. Also released quite a few smaller ones.
MMMM lots of good eats coming up.

I have eaten perch, it was in the former Yugoslavia, and I think they are better than trout.
But me always puts 'em back in this country.

On Lake Simcoe you are allowed to keep 50 a day with a total of 100 in possession.
In my opinion they are the best tasting fish there is. Mild, sweet & firm.
As for cooking. First fillet them. We don't batter them but do season them. I a plastic bag mix flour, salt and pepper. Place damp fillets in bag than shake. Place powered fillets in a large pan of hot oil and flip once only. As they are thin fillets it only take a short time to lightly brown up the coating. Worst thing you can do is over cook fish until dry & tough.

Are they the 'yellowfin' perch which I think is the main species of perch in mainland N America?
