Hi Fishman,

Well how can I put this.... Yes you can eat them, they have white flesh and are not as earthy a taste as Trout, they have a hint of Thyme in them hence their Latin name. But we tend not to catch them to eat but for the joy of seeing them in our hands in the water before we release them back from whence they came.

Best way to cook them is in foil in the oven with some sea salt, black pepper, lemon juice and a dash of white wine and maybe a sprig of dill, alittle chopped parseley and that's it. I have only eaten them once, kind of a tradition when you get into Grayling circles, and then you take real pleasure in seeing them returned to the river.

Average size of a shoal fish can be up to 1.5lbs, the bigger fish tend to be loners or maybe in twos and threes. The really big fish are total loners and very hard to locate and catch.

I will be posting more details later in my mini series, for those who want to learn more about them.

Like you I love the grayling. Many is the time that a grayling has saved an otherwise blank day . They dont seem to care how cold it is ..they still feed!

A friend and I have many times fished the yorkshire nidd with ice forming in the rod rings ...and they still feed!

In the depths of winter ...when things look bleek ...find a river containing grayling and you will catch one of the prettiest fish in fresh water.They well deserve the title "lady of the stream". Thank heavens that the attitude of them being vermin has changed and people have a more conservative view..
