Filleting mackeral...the easy way.

I'm sure everyone has their own way of doing this and for years I was a devotee of the head off, clean, then thumb along the top of the backbone way. then I was told of another way that changed my life....uuurh no, but it's much better.

Ok so some of you will know this and wonder how I didn't know but for those that don't, this saves a lot of fiddling about.

Clean and cut off head, slit underneath right down to tail. Pull sides apart slightly and stand on hard surface, thump with heel of hand, turn over and peel backbone and all ribs away in one go!!! Stick in smoker and wow best meal ever.

So easy when you know how!!!

tried it with macky, saw it on ray mears, 1st attempt was a disaster, 2nd went well, gives you a nice big bone free fillet

It's called a butterfly fillet and is the best way to keep more meat from the fish

Seen it done on trout as well.

Another useful way with mackerel....
If you do a standard 'in at the head and down the backbone' fillet, lay the fillet skin down and any large rib bones left will slice away with a single pass. Then cut through to the skin either side of the join in the flesh where the lateral line runs. Lift out the strip of flesh you just cut and it will take the remaining fine pin bones with it. Even Mrs M will accept them like that, and she HATES bones.

i work at a chippy and i have to remove the pin bone from alot of fish, all we do is get a pair of scisors and cut down the lateral line and then out at right angles across where the ribs were, the rib it of flesh is always soo thin it isnt worth keeping, people complain

i've tried it on herring. i only use macky for bait, i find the fish don't mind a bone or two. it's only us fushy humans that like them removed. LOL.
