I love my grub like the rest of us I suspect, and fish is my favourite food, always looking for new ways to cook it.

Caught a small flounder last night, I wouldn't have kept it normally but it swallowed the hook and had to be despatched.

So Having just watched Rick Styne he cooked a flounder as follows

Cut the outer fins and the line of small bones just inside them off, gut, cut the head off and clean. Then simply fry in a tiny amount of olive oil on both sides. I cooked mine until the white side was light brown and the dark side until just crisp.

You could brush with oil and grill it just as well.

On the plate squeeze of lemon, fantastic.

It then just falls of the bone, offered some to my daughter to try, she refused, then my two boys, they eat fish but not today, my wife tried one mouthful and said it was ok, they need some work. So I had the rest. Now I have only ever caught and eaten one other flounder caught last spring at chesil it was very watery and tasteless.

This time it was fantastic so sweet, just as good as a plaice. Definately a flounder fan from now on. I tend to keep the cooking very simple and as quick as possible too to keep the flavour.

Got a bit of a problem with the starry smoothound in the freezer, it is a bit strong in the amonia department, not sure I'll keep any more I catch unless I get some good recipies for them. Going to try it in a Tia green or red curry.

Anyone a fan of smoothound, how do you cook it.

i was told it aint good to eat, rays r full of amonia as well aint they, i think you are sposed to soak them in water befor you freeze/cook them

I'm a big fan of Smoothound, but i always put them back to fight another day as they are such an awesome fish to catch Exocets of the sea, and i have a lot of respect for them.

Flounder on the other hand, mmmmmm luvvly.

Agree with smoothhound about smoothhound,put em back.
Ray wings are great to eat ,pan fried in butter.
As soon as you get them get the wings off to stop the amonia sreading.

i dont keep any of my fish but an area devoted to recipe's would be great to read just incase i decide to take one home to try! think i have brought one fish home since i started fishing and that was a golden grey mullet which was about ten yrs ago..dont know how my mum cooked it but didnt taste to bad at all! had to soak it for ages to get rid of the muddy taste thats all i know!
