how do you burn a doggie please?

well after reading paul sunderland post about going out i thought i would go out to as the wind had died down round here
so i went down the peir to cacth the tide ended up staying till 4:30am i got about 5 whiting a small dab and a dog fish now what do you do with this dog as i was told to skin it but not sure how to plus any easy tips on cooking it as i usally steam my fish but i dont think that will work on a doggie
can i bake, boil, fry or burn it
please put all surjestions on the back of a sighed blank cheack payable to me

DOG FISH...also known as the ROCK SALMON in the chippy.
I always find that its a good idea to let the fish rest for 24 hours before cooking, this allows the fish to loose some of the moisture in the flesh. fresh fish (apart from the oily kind) tend to have alot of water in them and can be a bit soggy and tasteless if cooked straight from the sea.
Dogfish can be a bit tricky to skin so its best to see some diagrams on how to do it.look it up on the net.
Cooking however can be done in several ways, I normally cook mine in the oven wrapped in tin foil with a knob of butter a sqeeze of lemon juice and a touch of BLACK pepper.

to help skin drop in boiling water for a few seconds(no more) skin gets loose (or can just pour over from kettle if want) and comes away then. cut all arround just below head then rip back
can cook how you like after that , can steam with black bean sauce mmmm. wish i'd kept a few from last night now

when i saw some1 do it you cut around the head and the funny tail bits on there belly and discard them, and then just slice a line down its belly all the way and peel off the skin like you would an ell

ive seen it done but never done it myself...they cut off the head leaving a flap of skin at the back of the neck....then nail it too a board and yank the whole lot off!!! ive seen it done and works a treat but myself i would probably take all my skin off with it

well the boiling water did the trick combined with a poto peeler and he skin just dropped off
it now in tin foil in the over so its dog and chips tonight :-p
