Talking as requested how to fillet a flatfish

as requested heres the easiest way to fillet a flatfish

firstly you need a sharp flexible knife( a stronger one is ok for round but not flat)


cut across top of where you think shoulder is on guts side and eviserate( this is not essential if just removeing fillets but if cooking as whole its a must)
this fish was very full of roe as you can see in following pics



next locate the backbone as this will be your guide for the 2 long cuts

i start from the tail but you can start from head, cut all along and down to the backbone


pull flesh apart and push knife in and slide flat to the bone frame


and slide along in long gentle slices against the frame so as to remove all flesh


the other fillet is removed in a mirror fashion after cutting arround head






turning the fish over is a repeat of other side effectively




then its just a case of trimming the four fillets


and you should have 4 fillets ready for the pan


flat fish wil always give you 2 good and 2 poor fillets due to the stomach cavity
