The Best Trout recipe

Hi Guys (and girls)

I suppose most recipes are probably old family secret recipes, but what would you say is the best way to enjoy your days' catch?

I enjoy smoking my trout. Sometimes with success and sometimes not (muddy )

How do you get rid of that muddy taste? I suppose it's where you fish them? Does it help to keep the fish (albeit dead), in running water whilst fishing for the next?

Let's see who's got the best recipe...

Have a bottle of bourbon, Sainsburys own label its dead cheap and its excellent for totally numbing your mouth, after that you cannot taste a thing!

I only do reservoir fishing and i find none of the trout taste muddy, but hey smoking them must have a big enough impact on flavour alone?

However i like to wrap mine in tin foil,heavy sprinkling of black pepper, finely chop red, green peppers, half a clove of garlic, finely chopped onion and loads of proper butter, none of the silly low fat stuff. New pots and lashings of marrow, also with black pepper and loads of butter, secret ingredient is a bottle of white wine whilst cooking and two bottes to follow...you will love it! HIC!

I've never been a fan of trout .i guess it's to do with being spoiled with fresh sea fish .( a shame as there are some cracking trout not half a mile from me - i've caught plenty but the dog used to get them ) .
As a fan of fish and cooking in general i got a copy of the river cottage fish book and have found it invaluable.
O.k Nick Fisher isn't the worlds greatest angler and Hugh certainly isnt Raymond Blanc but it's no nonsense food with almost all local ingredients ..
On a similar note , i had a fillet of peppered smoked mackerel last night before work and as usuall its still repeating on me now ... on me now....on me now..

Steve, If you`d have brushed the fillet, with a beaten pigeon`s egg, it wouldn`t have. Still too late now. Peter

I stuff the trout with ricotta cheese, garlic and herbs (coriander, basil mixed with the cheese and bay leaf), into tin foil and bake in the oven. bootiful

i've decided to go more for the chinese approach and am gonna teach my pigeon to fish

would have expected a fellow wegie to have just deep fried the trout

Steve, Believe it or not, but my favourite is smoked mackerel, We go to Weymss Bay, when they`re running, there`s a great mark that never fails, for them. Take a bag of wood chips and smoke them there and then.

Going to a mates birthday do tonight:, he stays just along Tollcross Rd. not far from Parkhead Cross. Small world ain`t it.

very small fella, my whole family dads side are from Shettleston !

could see paradise from ma grans kitchen window !

p.s im on you with the impromptu mackerel smoking .... very tasty

You must have done the Glesca overnight sea fishing, sleeping bag open fire, borrowed galvie bucket for boiling mussels, (breakfast and dinner)and numerous libations to keep the cold at bay. Rhu Narrows was like a second home to us. AH those were the days.

i was but a nipper and left some 20 year ago tho the old man has some tales of the old shettleston tigers and his time growing up in the east end..
spent a good few years in Edinburgh too when he was at Redford barracks.
I've always thought Glasgow would be the best city in the world if only it had less glaswegians

I actually think my whole experience of fishing in scotland included poaching in the Pentlands and a mackerel trip outta Troon and falling in the local burn about 20 times

2 years in Belfast in the early 80's saw me start sea fishing only to end up coarse fishing in Berlin 2 years later ! I actually starded river fishing again on the Avon when i first moved here but soon got hooked on Chesil beach and Weymouth and have never looked back since !

with regards to the trout i guess ive never given it a chance but always seem to order breaded plaice whenever i see it ..I do like making a glut of mackerel pate after a session on chesil and even my 4 year old daughter will eat mackerel and pilchards form a tin !!
They say its a 'brain food' and who am i to argue
