Re: Eating freshwater fish

I hav eaten Perch, in the Former Yugoslavia. I have to say that they were extremely tasty, but would not do so here.
If you are interested, I suggest you find yourselve a copy of 'Freshwater Fishing' by the legendary due of Faulkus and Buller. Every species has a couple of recipes.

Re: Eating freshwater fish

Many cluns have a rule about removing or allowing smaller pike to be taken. Hugh Fernley Wittinstall (or however you spell it) , cooks one for an angling freind. "Good hey" says Hugh, "Hmm Good" says his mate, "Cut!", "O f@@@ me that tastes likesh@@". On the whole most freshwater fish taste like cr@@ anyway. We need to be open to the fact that they are eaten. I've tried eel (OK), pike (hmmm! , OkIs!) and bream (very strong flavour). We've probably all been eating the Mekong Catfish (Basa) and not realised what it was .

I think there is a scope for put and take coarse fisheries.

eels-yep.... fried=yuchh..boiled/baked/jellied etc all yuchh, but when hot smoked its the doggs danglies.

chub/carp/perch/gudgeon/bream/roach/barbel/ruffe etc -not tried.

grayling- ok & a damn sight better than farmed trout.

Hi dude i`m a chef and i have eaten and cooked all types of freshwater fish carp is a delicacy in poland. but both are very boney. however I have eaten carp in both Germany and Czechoslovakia as is the custom there.Had it smoked in Czech and boiled in Germany. carp is a very dense fish and pike had a cod like feel to it. hope this helps.
