How to Carp 101

I have caught carp off&on but always let go. I've eaten carp and it's good but I'm not shure how to fix it. I'm told to fillet and use the top part like the loin you might say. What about the hair bones in the meat I have been told lots of ideas but nothing for sure.

Please help
