sandwich bay

hi all ive only been fishing a year and took my bro inlaw to sandwich bay today. we got there to find an empty beach (not a good sign).
we fished 2 hours either way and only picked up a few very small whiting and 3 small flatties. could anyone advise me on. good weather to fish . what i mean is does the cold/wind/wind direction e.t.c affect things that badly. sorry for asking probably simple stuff. but if you dont ask you dont get.
what are ideal conditions in thanet....
we were using sand eel/lug/squid.

hope someone can make me a bit more wiser LOL .....daz
